Traditional Irish beef stew is a hearty and flavorful dish that is perfect for warming you up on a chilly day. Here is a basic recipe for Irish beef stew:


To make this delicious Irish beef stew you will need :

  • 2 pounds of stewing beef, cut into chunks
  • 2 tablespoons of vegetable oil
  • 2 onions, chopped
  • 2 cloves of garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and cubed
  • 2 tablespoons of tomato paste
  • 4 cups of beef broth
  • 1 cup of Guinness beer (optional)
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef chunks and brown them on all sides. Remove the beef from the pot and set aside.

2. In the same pot, add the onions and garlic. Cook until softened, about 5 minutes.

3. Add the carrots and potatoes to the pot and cook for another 5 minutes.

4. Stir in the tomato paste and cook for 1-2 minutes.

5. Return the beef to the pot. Add the beef broth, Guinness beer, Worcestershire sauce, dried thyme, salt, and pepper. Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for about 2 hours or until the beef is tender.

6. Taste and adjust the seasoning, if needed. Serve the Irish beef stew hot, garnished with chopped fresh parsley.
