Ingredients:


• 2 cups granulated sugar

• 1 teaspoon ground cinnamon

• 1 teaspoon ground nutmeg

• 1 pinch salt

• 1/2 cup unsalted butter

• 6 sweet potatoes, peeled and sliced into rounds

• 1 tablespoon vanilla extract


Instructions


1. In a small bowl, combine the sugar, cinnamon, nutmeg, and salt. Stir until the spices are evenly blended.


2. Melt the butter in a large pan or heavy-bottomed pan over medium heat.


3. Add the sliced sweet potatoes and gently toss them to coat with the melted butter.


4. Evenly sprinkle the cinnamon-sugar mixture over the sweet potatoes, stirring carefully so every slice is coated.


5. Reduce the heat to low, cover the skillet, and cook for about 1 hour. Stir occasionally to prevent sticking and to coat the potatoes in the rich syrup as it thickens.


6. Continue cooking until the sweet potatoes are tender while still holding their shape, and the syrup has turned into a glossy caramel glaze.


7. Remove the pan from the heat and stir in the vanilla extract just before serving.


8. Serve warm and spoon the buttery cinnamon glaze generously over the sweet potatoes.
