Ingredients:
- 4 bone-in, skin-on chicken thighs (approximately 325g each)
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 6 garlic cloves, finely minced
- 1 tablespoon fresh thyme leaves, chopped
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter, softened
- 5 fresh thyme sprigs
- 1/2 teaspoon paprika, optional
Directions:
Preheat the oven. Preheat your oven to 400°F (200°C). Lightly grease a baking dish if needed.
Prepare the chicken. Pat the chicken thighs thoroughly dry with paper towels. Season generously on all sides with sea salt and freshly ground black pepper. For extra flavor, let the seasoned chicken rest at room temperature for about 15–20 minutes before baking, or refrigerate it covered for up to 30 minutes.
Make the garlic butter. In a small bowl, combine the minced garlic, chopped thyme leaves, olive oil, softened butter, and optional paprika. Mix until you have a fragrant garlic-herb butter.
Coat the chicken. Arrange the chicken thighs skin-side up in the baking dish. Rub the garlic butter mixture evenly over the thighs, working some underneath the skin where possible for extra flavor.
Add the thyme. Scatter the fresh thyme sprigs around the chicken in the baking dish.
Bake until golden. Transfer the dish to the preheated oven and bake for approximately 35–45 minutes, depending on the size of the thighs. Baste the chicken with the pan juices halfway through cooking to keep the meat flavorful and encourage a glossy finish.
Check for doneness. Make sure the thickest part of each thigh reaches an internal temperature of at least 165°F (74°C), without touching the bone with the thermometer. For especially tender thighs and crispier skin, cook a little longer if desired.
Rest and serve. Let the chicken rest for 5 minutes before serving. Spoon the buttery garlic pan juices over the chicken and garnish with extra fresh thyme if desired. Serve with creamy mashed potatoes, roasted vegetables, or crusty bread.
